Ingredients

  •  Udon Noodle Sauce
  •  2 ½ tbsp soy sauce
  •  2 tbsp oyster sauce
  •  1 tbsp mirin
  •  2 tsp brown sugar
  •  ½ tsp rice wine vinegar
  •  Water
  •  2 Packages udon noodles – 13 oz. total
  •  2 ½ cups stir fry vegetables
  •  2 stalks scallions – cut into 2-inch pieces
  •  ½ lb. large shrimp
  •  1 tbsp avocado oil

Directions

  1. Prepare the udon noodle sauce by mixing all of the ingredients in a small bowl and set aside.
  2. Add water to the CanCooker and place on a medium-to-medium low heat source.
  3. Bring water to a boil and add in the udon noodles.
  4. Stir gently until the udon noodles are separated, about 1-2 minutes.
  5. Using the CanCooker Strainer Lid, pour off the water and remove the noodles from the CanCooker and place in a bowl.
  6. Return the CanCooker to the heat source and add in the oil.
  7. Stir in the stir fry vegetables and cook until the vegetables are soft.
  8. Add in the shrimp and cook for 2-3 minutes until the shrimp are pink.
  9. Add the noodles, sauce and the scallions, cook for 3-5 minutes until warmed through.
  10. Serve immediately.
