Ingredients

  • 1 ½ pounds medium red potatoes
  •  1 ½ cups water
  •  ¼ cup butter – melted
  •  3 tbsp fresh parsley – minced
  •  1 tbsp lemon juice
  •  1 tbsp chives – minced
  •  Salt and pepper to taste

Directions

  1. Cut a strip of peel from around the middle of each potato.
  2. Place the potatoes on the rack and in any CanCooker and add water.
  3. Put the CanCooker on a medium-to-medium low heat source.
  4. Cook the potatoes 15-20 minutes, until tender.
  5. In a small bowl combine the butter, parsley, lemon juice and chives and set aside.
  6. Using the CanCooker  Strainer Lid, drain the water off of the potatoes, remove rack.
  7. Pour the butter mixture over the potatoes, tossing to coat.
  8. Season with salt and pepper and serve warm.
