Squirrel & Dumplings From WWF “Kitchen News” Sept. 2018

INGREDIENTS:  

Squirrel – 2 dressed and quartered squirrels

1/4 Cup Olive Oil

1/2 Cup White Wine

2 Stalks Celery – Chopped

3 Carrots – Chopped

1 Onion – Sliced

Black Pepper and Salt to taste

DIRECTIONS:

Heat oil in cast iron skillet and brown squirrel portions. Add wine and water to cover squirrel and add salt & pepper. Bring to simmer and cook for an hour or until meat flakes. Add celery, carrots and onions and simmer for 15 minutes.

DUMPLINGS

INGREDIENTS:

1 Cup Flour

2 teaspoons baking soda

1 Stick of Butter – Room Temp.

DIRECTIONS:

Mix all ingredients together in bowl. Add tablespoons full of dumpling mix to squirrel. Recover the skillet and cook for 20 minutes or until dumplings are done.
