Ingredients
- 1 cup Cocoa
- 1 cup Sugar
- 1 cup Evaporated Milk
- 1 cup Vegetable Oil
- 1 cup Boiling Water
- 2 cups All-Purpose Flour
- 4 Eggs
- 3 tsp Vanilla
- 1 tsp Baking Soda
- 1 tsp Baking Powder

Directions
- Place cocoa and sugar into large mixing bowl, add boiled water and stir.
- Add all other ingredients and mix well.
- Grease miniature loaf pans and pour batter into pans approx 2/3 full.
- Place rack in the bottom of the CanCooker and add water to the top of the rack.
- Place 2 pans of batter on top of the rack.
- Place lid on, latch and steam for 30 minutes.
- Remove and let cool.
Recipe Note
Use miniature loaf pans. We used disposable aluminum ones. Size: 5-1/2″, long x 3-1/2″, wide x 2″, deep. Only 2 pans will be able to fit into the CanCooker at a time. This recipe will yield 4 loaves. Make batter ahead of time and place in storage container for easier use at campsite, etc.
