Ingredients

  •  1 cup Cocoa
  •  1 cup Sugar
  •  1 cup Evaporated Milk
  •  1 cup Vegetable Oil
  •  1 cup Boiling Water
  •  2 cups All-Purpose Flour
  •  4 Eggs
  •  3 tsp Vanilla
  •  1 tsp Baking Soda
  •  1 tsp Baking Powder

Directions

  1. Place cocoa and sugar into large mixing bowl, add boiled water and stir.
  2. Add all other ingredients and mix well.
  3. Grease miniature loaf pans and pour batter into pans approx 2/3 full.
  4. Place rack in the bottom of the CanCooker and add water to the top of the rack.
  5. Place 2 pans of batter on top of the rack.
  6. Place lid on, latch and steam for 30 minutes.
  7. Remove and let cool.

Recipe Note

Use miniature loaf pans. We used disposable aluminum ones. Size: 5-1/2″, long x 3-1/2″, wide x 2″, deep. Only 2 pans will be able to fit into the CanCooker at a time. This recipe will yield 4 loaves. Make batter ahead of time and place in storage container for easier use at campsite, etc.
