Garlic Herb Salmon Sliders

Ingredients

  • 1/3 cup panko bread crumbs
  • 4 tsp shallot finely chopped
  • 2 tsp fresh dill snipped
  • 1 ½ tbsp or more to taste – prepared horseradish
  • 1 egg beaten
  • ¼ tsp salt
  • 1/8 tsp pepper
  • 1 lb salmon fillet skin removed and cubed in small pieces
  • 8 whole wheat dinner rolls split and roasted
  • ¼ cup garlic herb spreadable cheese
  • 8 leaves lettuce

Directions

  • In a large bowl combine panko crumbs, shallot, dill, horseradish, egg, salt, and pepper.
  • Place salmon in a food processor and pulse until finely chopped, add in the breadcrumb mixture.
  • Mix lightly and then shape into eight ½ inch patties.
  • On a medium-to-medium low heat source place 4 patties in the CanCooker.
  • Cook 3-4 minutes per side until lightly browned.
  • Repeat with remaining 4 patties.
  • Serve on rolls with spreadable cheese and lettuce.
