Ingredients

  • 1 lb. bulk spicy pork sausage
  •  1 can pale ale or other light beer
  •  1 package 32 oz. Velveeta cheese, cubed
  •  ½ cup pepper jack cheese – shredded
  •  1 tbsp CanCooker Original Creole Seasoning
  •  1 can – 28 oz. diced tomatoes with mild green chilies – undrained
  •  1 can black beans – rinsed and drained
  •  ¼ cup fresh cilantro – minced
  •  Optional – jalapenos and tortilla chips

Directions

  1. In any CanCooker on a medium-to-medium low heat source, cook the sausage until no longer pink, about five minutes, crumbling the meat.
  2. Add beer and cook until slightly reduced, about 3-4 minutes, stirring occasionally.
  3. Add Velvetta, pepper jack cheese and CanCooker Original Creole Seasoning.
  4. Stir occasionally until melted.
  5. When melted stir in the tomatoes, beans and cilantro.
  6. Continue to cook for an additional 5 minutes or until warmed through.
  7. If desired, garnish with jalapenos and additional cilantro.
  8. Serve with tortilla chips.
