Chicken Primavera

Ingredients

  • ½ cup all-purpose flour
  • 1 tbsp dried parsley
  • 1 tsp dried basil
  • 1 ½ lbs skinless boneless chicken strips cut into strips
  • ¼ cup olive oil
  • 1 tbsp minced garlic
  • 2 ¼ cups chicken stock
  • 1 cup frozen mixed vegetables
  • 1- pint grape tomatoes halved
  • 1 bunch green onions sliced
  • 1 zucchini quartered and sliced
  • 2 tbsp sun dried tomato pesto

Directions

  • Mix together flour, parsley, and basil in a medium bowl.
  • Add chicken strips and toss until well coated.
  • In any CanCooker on a medium-to-medium low heat source heat olive oil.
  • Add chicken and cook, turning occasionally until lightly browned – about 10 minutes.
  • Add in garlic and cook for another minute.
  • Add the chicken stock, mixed vegetables, grape tomatoes, green onions, zucchini and pesto.
  • Stirring occasionally, until heated through about 10 minutes.
