Ingredients
- ½ cup all-purpose flour
- 1 tbsp dried parsley
- 1 tsp dried basil
- 1 ½ lbs skinless boneless chicken strips cut into strips
- ¼ cup olive oil
- 1 tbsp minced garlic
- 2 ¼ cups chicken stock
- 1 cup frozen mixed vegetables
- 1- pint grape tomatoes halved
- 1 bunch green onions sliced
- 1 zucchini quartered and sliced
- 2 tbsp sun dried tomato pesto
Directions

Mix together flour, parsley, and basil in a medium bowl.

Add chicken strips and toss until well coated.

In any CanCooker on a medium-to-medium low heat source heat olive oil.

Add chicken and cook, turning occasionally until lightly browned – about 10 minutes.

Add in garlic and cook for another minute.

Add the chicken stock, mixed vegetables, grape tomatoes, green onions, zucchini and pesto.

Stirring occasionally, until heated through about 10 minutes.
