Ingredients

  •  1 cup onion – chopped
  •  2 tsp garlic – minced
  •  1 lb. mild Italian sausage – casings removed
  •  32 oz carton chicken stock
  •  2 cans (15 oz) petite diced tomatoes with juice
  •  1 can (6 oz) can tomato paste
  •  ½ tsp Italian seasoning
  •  2-3 tbsp fresh basil – chopped
  •  8 oz uncooked lasagna noodles – broken into bite size pieces
  •  ½ cup grated parmesan cheese
  •  1 cup shredded mozzarella cheese
  •  salt and pepper to taste

Directions

  1. In any Cancooker on a medium-to-medium low heat source add the onion, garlic and sausage.
  2. Cook until browned.
  3. Drain any excess grease.
  4. Add the chicken stock, tomatoes and the tomato paste.
  5. Stir until combined and then add in the Italian seasoning and basil.
  6. Add in the noodles.
  7. Place the lid on the CanCooker and cook 8-10 minutes or until the noodles are tender.
  8. Stir in the parmesan cheese, mozzarella cheese and the salt and pepper to taste.
  9. Ladle the soup into bowls and top with more basil if desired.
