Hard Cider-Braised Squirrel and Mushrooms Recipe

INGREDIENTS
4 tbsp. butter or lard
2-3 squirrels, cleaned and quartered, ribs removed from back section
1 pound shitake or oyster mushrooms, sliced
1 large Vidalia onion, chopped
12 ounces hard apple cider
½ cup unfiltered apple cider
1 tbsp. Dijon mustard
1 teaspoon dried tarragon
1 teaspoon dried oregano
2 tsp. each kosher salt and freshly ground black pepper, divided
1 small shallot, finely chopped
2 tsp. apple cider vinegar
1 bay leaf
Dredge:
1 cup all-purpose flour
1 tbsp salt
1 tbsp black pepper
1 tsp garlic powder.
