Fresh catch Ceviche!
1 1/4 lbs. raw Trigger fish
1/3 cup fresh lime juice (prefer key limes)
1/3 cup fresh lemon juice
1 Sour Orange, juiced. It is an orange that looks like it got drunk, dirty, and hung over. 🙂
2 medium roma tomatoes, diced (1 cup)
3/4 cup chopped red onion
1/2 cup chopped cilantro
1 medium jalapeno pepper,* seeded if preferred for less heat, diced
Salt and pepper, to taste
Slice the onions and place in a bowl. Add the lime, lemon and Sour orange juice and let these marinate while you continue- this will help remove the bitterness from the onion.
Cut the fish into 1/2-inch to 3/4-inch cubes and toss them with the marinating onions.
Add the remaining ingredients.
Refrigerate for 30 minutes. The longer you let the fish cure in the marinade, the more “cooked” through the ceviche will become.
Note: you can use: Fresh wild ocean fish (red snapper, tilapia, Corvina, sea bass, mahi-mahi, halibut, dorado, or Shrimp)
